Ingredients

  • 1.1 kg of potatoes
  • salt
  • freshly ground black pepper
  • 220 g cold butter
  • 230 ml of milk
  • 1 tablespoon of grated lemon peel

Directions

  1. Peel and cut the potatoes and boil them in salted water for 20 minutes.
  2. Meanwhile, heat the milk. When you use warm milk instead of cold, the potatoes absorb the liquid better, which prevents them from becoming too rubbery.
  3. Unlike milk, butter should be added cold to potatoes.
  4. Slowly add pieces of butter to the boiled and mashed potatoes and mash them into a fine puree.
  5. Add just enough milk to make the potatoes creamy but still thick. About 1/4 of the milk, then add salt and pepper and the grated rind of one lemon.
  6. The lemon zest provides just enough acidity to cut through all the rich textures and flavors and add a nice freshness and balance to all the ingredients.
