Recipe: elderberry ice cream

A refreshing dessert that does not require an appliance to prepare

Elderberry picking season is in full swing and many are throwing themselves into making syrup these days. If you have last year's syrup in stock, use it for dessert. It is an excellent ice cream that you can make even without an ice cream maker.

Elderberry ice cream

Ingredients

  • 2 egg yolks
  • 40 g of powdered sugar
  • 200 ml of milk
  • 150 ml of sweet cream
  • 100 ml of elderberry syrup
  • 2 tablespoons of lemon juice

Directions

  1. Mix the egg yolks and sugar.
  2. Pour the milk into a container and boil it over low heat.
  3. Lightly pour milk into the yolks and stir constantly. Then return the mixture to the heat and cook for 10 minutes.
  4. After cooking, place the mixture in a new container and let it cool. When the cream has cooled, add whipped cream, elderberry syrup mixed with lemon juice. Stir with a spatula until the cream and syrup are well combined. Then pour the mixture into the cooled egg yolk and milk cream.
  5. If you have an ice cream maker, pour the prepared mixture into it at this time and follow the instructions for making ice cream.
  6. If you don't have an ice cream maker, transfer the mixture to a container suitable for freezing and place it in the freezer for 2 hours. Then you take it out of the freezer, mix the mixture again and put it back in the freezer. Repeat this process 2 to 3 times at the same time interval. Finally, leave the mixture overnight in the freezer.
