Gin and tonic pancakes
Ingredients
- 100 g plain flour
- 100 g of sharp flour
- 1 egg
- 1 baking powder
- 2 tablespoons of powdered sugar
- 250 ml of gin and tonic

- 250 ml of gin and tonic
- 3 tablespoons of powdered sugar
- juice of two lemons
Directions
- Prepare 500 ml of gin and tonic according to your taste. A ratio of 2:5 is recommended, but if you like a stronger cocktail, you can add a few drops of gin. Leave 250 ml of the cocktail aside.
- To prepare the syrup, mix 250 ml of gin and tonic with three tablespoons of powdered sugar and the juice of two large lemons. Place on the fire and stir until it boils, that is, until the liquid turns into a thicker syrup.
- Prepare the pancakes. Mix flour and baking powder, add a pinch of salt and sugar. Then add the egg and 250 ml of gin and tonic. Mix well with a whisk to get a slightly thicker mixture than the classic pancake mixture.
- Heat a little oil in a pan and spoon the mixture onto the pan. Fry the pancakes on medium heat for about a minute on each side to make American pancakes.
- At the end, pour gin and tonic syrup over the pancakes.
- Serve with a glass of gin and tonic and fresh fruit.
