Recipe: Japanese pancakes or soufflé pancakes

You are all already familiar with the American and French types of pancakes. Therefore, the time has come to try a new type, more precisely - Japanese pancakes. Due to their extremely soft and airy texture, they are also called soufflé-pancakes.

What sets these pancakes apart from the rest is the way they are baked, as it is important that they are soft in the middle and slightly crispy on top and bottom. Serve them for breakfast, lunch or as a treat with your afternoon coffee.

To properly bake these pancakes, you will need a round metal pan or ring pans, diameter 5 or 7 cm, height 5 cm.

Ingredients

  • 1 ½ cups all-purpose flour
  • 3 teaspoons of powdered sugar
  • 2 teaspoons of baking powder
  • ½ teaspoon of salt
  • 1 ¼ cups milk
  • 4 teaspoons of butter
  • ½ teaspoon of vanilla extract
  • 1 egg yolk
  • 3 egg whites
  • oil

  • -fruits (strawberries, raspberries, blueberries, kiwi, pineapple, tangerines...)

Directions

  1. Mix flour, powdered sugar, baking powder and salt in a large bowl. In another, milk, melted butter, vanilla extract and egg yolks until well combined. Add the egg whites to the third bowl and beat them with a hand mixer for about two minutes until they increase in size and become firm.
  2. Sieve the contents of the container with milk into a bowl with flour. Mix well, don't worry if some small lumps remain. Carefully add a third of the beaten egg whites and mix gently. Then add the rest of the egg whites, gently mix again so that everything is slightly combined.
  3. Lightly oil a round metal mold or cake pans. Heat the hotplate to a medium-high temperature. Oil a suitable pan, place it on the cooker, and place a metal model in the middle.
  4. Half fill the metal model with dough. Cover the pan and let the pancake cook for about 5 minutes until it rises to the top of the pan.
  5. Then, using a spatula, slowly lift it up to see if the bottom is cooked. In this case, carefully turn it to the other side together with the metal mold.
  6. Cover the pan again and bake for another 5 minutes. Check if the second part of the pancake is also cooked and toasted, then place it on a plate.
  7. Serve immediately with toppings of your choice.
