We present you a Spanish recipe whose main star is tuna in tomato sauce.
The best dishes are damn simple and this recipe is the star of it tuna in tomato sauce, is proof of that. Appointed in her home district Tuna con tomate is a real specialty, as pieces of tuna are poached in tomatoes the sauces almost melt in your mouth. It is important to use fresh fish and quality vegetables. Even on cold winter days, tuna will conjure up summer on your plate.
Tuna in tomato sauce
Ingredients
- 900 g of fresh tuna (without skin and bones)
- 900 g of fresh tomatoes
- 125 ml of olive oil
- 3 tablespoons of freshly chopped parsley
- 3 cloves of garlic
- fresh paprika
- onion
- ½ teaspoon of sugar
- salt and pepper
Directions
- In a blender, mix 60 ml of oil with a clove of garlic and chopped parsley. Mix until the ingredients are combined.
- Pour the rest of the oil into a large pot, fry the chopped onion and pepper on it. Fry at a moderate temperature until the vegetables are golden brown and soft. Add the garlic and fry for another minute.
- Add roughly chopped tomatoes and sugar (salt and pepper if desired). Cook everything until the mixture boils. Cover the pot and cook for about 10 minutes, until the tomatoes almost fall apart.
- Uncover the pot and cook for another 15 minutes to allow the flavors to combine. Taste the sauce and adjust the seasoning.
- Remove the pot from the heat and use a stick blender to turn the mixture into a smooth sauce.
- Put the sauce back on the fire and dip the cubes of fresh tuna into it. Cut the tuna into pieces about 3 centimeters in size. Then cook it in the sauce for another 5 to 10 minutes.
- Serve it in cups flavored with parsley and garlic oil.
