Ingredients

  • 2 kg of strawberries
  • 400 g of sugar
  • 4 bags of bourbon vanilla sugar (40 g)
  • 2 lemons

Directions

  1. Wash the strawberries and remove the stalks. Then place them in a bowl and cover with water. Let them rest for about 20 minutes, then rinse well.
  2. Wipe the strawberries with a kitchen towel and cut into quarters.
  3. Pour the strawberries into a large pot and add the sugar. Let the strawberries and sugar sit together for 8 hours or overnight. This step will help release the juices from the berries.
  4. After the time has passed, strain the juice released by the berries and pour it back into the pot. Add vanilla sugar.
  5. Place the pot on the stove and heat over medium heat. Cook until the mixture boils. Then reduce the temperature and let the jam cook slowly for another half hour.
  6. Meanwhile, squeeze the juice from two lemons and add it to the pot along with the drained water.
  7. Cook the jam for another 30 minutes, stirring occasionally, until it thickens and develops its full flavor.
  8. Meanwhile, sterilize the jars you plan to use to store the jam.
  9. Carefully pour the hot jam into sterilized jars, close tightly with a lid and place them upside down. This will create a vacuum that will help preserve the jam for a longer time.
