Recipe: tepache de piña, a refreshing pineapple drink for summer days

The refreshing drink tepache de piña is a slightly fermented drink made from fresh pineapple and brown sugar.

Ingredients

  • ½ pineapple
  • 1 liter of water
  • 2 slices of ginger
  • 5 tablespoons of brown sugar or cane sugar
  • 2 cinnamon sticks
  • 2 cloves
  • 1 star anise

Directions

  1. Wash the pineapple and cut it into cubes along with the skin and core.
  2. Put the pineapple and all the other ingredients in a large jar with a lid and cover it with water.
  3. Mix everything well and let it ferment for 3 to 5 days.
  4. Then strain the mixture and cool it well. Serve with ice cubes.
