We probably encounter sour cherries more often than we think. In addition to adding their syrup to various desserts and jams, it is also an integral part of many drinks and liqueurs. Dried cherries are often found in various energy bars or muesli, they can also be eaten as raisins.
(Un)conventional
If you are into unusual combinations, you simply have to try the combination of cherries and black pepper, especially in dishes with pork, beef or game. Chicken is also excellent in cherry sauce, to which we add lemon juice, basil and sage. In rare situations, cherries can also be used when preparing fish. To the cooked fillets we add a seasoning of carrots, onions, garlic, honey, vinegar, soy sauce, green pepper, cornstarch and cherries. Cherries cannot be used in similar dishes, as they lose their flavor at higher temperatures. Cherries are most often used in oriental cuisine, where they are added to various sausages and other meat dishes. In Hungary, sour cherry soup is known, made from flour, sour cream, salt, sugar and cherries. Another version of cherry soup contains, in addition to cherries, white wine, cinnamon, lemon juice and egg yolk. Cherries are no stranger to Asian cuisine either. For example, the Chinese use them for hot cherry sauce, in which, in addition to cherries, they also use red chili sauce, milk powder, sugar, vinegar, ginger and garlic. The sauce is often served with dishes fried in tempura (a typical form of Chinese frying). Herb lovers will be delighted by the fact that sour cherries pair perfectly with fresh sage, chives and verbena. Despite the fact that many people would think that sour cherries belong in fruit salads, they add incredible variety to the selection of ordinary salads.
And a little bit of everything
Cherries can also be used instead of tea: pour boiling water over them and add sugar and, if desired, a little orange juice. Dry cherries can be added to mulled wine to enrich its taste. For non-classic desserts, the cherries can be fried in butter; when heated, their aroma changes slightly. The full cherry aroma is also emphasized by dairy products, especially sweet cream, cottage cheese and mascarpone. And if we want our desserts to have a really rich taste, we should definitely use sour cherries instead of cherries. These are also usually very easy to pit: hold the stem with one hand and the fruit of the cherry with the other. Pull the stem and the stone will come out of the fruit. Otherwise, cherry pits have a special value. They can be used in combination with chamomile for hot-cold compresses or indulge in a massage with warm cherry stones.
