Ingredients

  • 102 g of flour
  • 1½ teaspoons baking powder
  • ¾ teaspoon of salt
  • 50 g of sugar
  • 1 lemon
  • 1½ teaspoons of vanilla extract
  • 3 large eggs
  • 170 g of cheese ricotta
  • 60 ml of buttermilk
  • 28 g of butter

Directions

  1. Mix flour, baking powder and salt in a bowl.
  2. Pour the sugar into a large bowl, then finely grate the lemon peel and gently rub it into the sugar. Add vanilla extract and mix. Add eggs and mix until foamy, then add ricotta, buttermilk and butter and mix until you get a smooth mixture. Add the flour and baking powder mixture and mix gently until everything is combined and there are no lumps.
  3. Heat a pan over medium heat and grease it generously with butter.
  4. Next, pour about 1/4 cup mqase zaq pancake batter into the pan. Bake until the undersides are golden brown and the tops are puffed, about two to three minutes.
  5. Turn and cook the other side for another 2 minutes.
  6. Repeat until the mixture is used up (greasing the pan with each new pancake).
