Homemade Mexican Nachos
Ingredients
- 500 g of lean ground beef
- 2 tablespoons Mexican spice mix (paprika, onion powder, garlic powder, black pepper, ground cumin, dried parsley, dried oregano, cayenne pepper)
- ⅓ cup water
- ⅔ cup drained and washed red kidney beans
- 200 g tortilla chips
- 4 cups shredded cheddar and/or Monterey Jack cheese
- 4 sliced spring onions
Directions
- Heat the oven to 190°C.
- Fry the beef in a pan over medium-high heat until it loses its pink color. Drain off excess fat.
- Add the Mexican seasoning mix, water and brown beans. Cook for about 5 minutes or until most of the water has evaporated.
- Meanwhile, arrange the tortillas on a baking sheet. Add half the cheese, beef mixture, and remaining cheese. Sprinkle with half the spring onion.
- Bake for 8 to 10 minutes or until cheese is melted and bubbly.
- Remove the pan from the oven and add the remaining spring onions and toppings as desired. Serve with salsa and sour cream.
