Ingredients

  • 500 g of lean ground beef
  • 2 tablespoons Mexican spice mix (paprika, onion powder, garlic powder, black pepper, ground cumin, dried parsley, dried oregano, cayenne pepper)
  • ⅓ cup water
  • ⅔ cup drained and washed red kidney beans
  • 200 g tortilla chips
  • 4 cups shredded cheddar and/or Monterey Jack cheese
  • 4 sliced spring onions

Directions

  1. Heat the oven to 190°C.
  2. Fry the beef in a pan over medium-high heat until it loses its pink color. Drain off excess fat.
  3. Add the Mexican seasoning mix, water and brown beans. Cook for about 5 minutes or until most of the water has evaporated.
  4. Meanwhile, arrange the tortillas on a baking sheet. Add half the cheese, beef mixture, and remaining cheese. Sprinkle with half the spring onion.
  5. Bake for 8 to 10 minutes or until cheese is melted and bubbly.
  6. Remove the pan from the oven and add the remaining spring onions and toppings as desired. Serve with salsa and sour cream​​.
