Interview: Bine Likeb, cafe Moderna

A "specialty" cafe has opened in the center of Ljubljana on the renovated Cankarjeva street in the Moderna galerija. Moderna is not an ordinary cafe. It is a cafe with its own roastery, which ensures always freshly roasted coffee and the highest quality coffee drink.

What does the Moderna cafe offer?

It offers everything that a modern cafe has to offer. "Specialty" coffee is prepared on technologically advanced La Marzocco espresso machines, which are the inspiration of every barista. In addition to espresso drinks, the Brew bar will delight you with a selection of different "single origin" coffees from Kenya, Ethiopia, Guatemala, Colombia, Mexico, which are prepared by hand on Cemex, Aeropres, Sifon, Hario V60, Ibrik... With the knowledge of highly qualified staff and listening to your wishes, we will prepare your perfect cup of coffee. For demanding gourmands, master Karim Merdjadi's confectionary creations are available as well as our homemade savory and sweet pies, daily soups... We have also taken care of a selection of Slovenian and foreign boutique beers, wines and spirits.

What is "specialty" coffee?

"Specialty" coffee is coffee of the highest quality, which differs from the commercial coffee that we mostly drink in bars and buy in supermarkets in that it is subject to strict control from the bean to the preparation of a cup of coffee. It is seasonal, grown to the highest standards, properly transported and stored, freshly roasted and expertly served. In the coffee world, "specialty" coffee is a global trend that is the driving force behind the quality and innovation that we all want.

Cafe Moderna also boasts a micro roaster.

Can you tell us more about micro roasters?

Micro roasters are synonymous with quality, they are a trend in more developed metropolises around the world and they are increasing their market share day by day compared to larger industrial roasters. In our own micro roastery, we import only seasonal raw coffee of the highest quality, which we roast on the fly.

But what if we want to drink quality coffee at home?

You can also buy freshly roasted coffee and more than 35 types of scattered Althaus teas at the Moderna cafe to take home, and in December we have prepared special gift packages for you. In addition to coffee, you can buy accessories for making coffee at home in the store. The Brew Coffee Academy also operates in the premises of the Moderna coffee shop, which runs courses for professional staff and baristas as well as for lay people who want to learn more about coffee.
