The story of "taquería" and catering El Patrón is the fruit of the friendship and common love for Mexican street food of three friends: two Mexicans (Skippy and Omar) and a Slovenian (Uroš), who got acquainted with Mexican culture through traveling and studying. Getting together and reminiscing about the cozy corners and typical flavors of Mexico City led the happy company to talk about opening their own Mexican street kitchen, if only to have access to the tacos and other street delicacies that they miss so much. The idea quickly outgrew the framework of fantasy and grew into an increasingly thoughtful and tangible project.

Among the more challenging aspects of the process was finding a suitable point of balance between the expectations of individuals already familiar with Mexican street cuisine and the tastes of the local population (including vegetarian and vegan offerings). Therefore, the team gathered friends and acquaintances from all over the world and presented them with dishes prepared according to authentic Mexican recipes. Based on their responses, they chose the ones that garnered the most praise and interest. An additional challenge in the selection of dishes was the availability of individual ingredients that are not typical for our area, or whose ingredients can be replaced with local ones, without sacrificing the true Mexican taste.

The mission of the El Patrón team is for customers to experience the most authentic Mexican street cuisine possible, so they prepare food only according to authentic traditional recipes and use quality and fresh ingredients. To the greatest extent possible, they use locally grown foods and verified products from abroad, for example, original Mexican salsa and organically grown coffee, which, in cooperation with Zadruga Buna, arrives in Slovenia according to the principles of Fair Trade. They are very happy to cooperate with like-minded people from the local environment, such as the Mali grad brewery from Kamnik, which supplies them with excellent boutique beer, and the ecological farm Plahuta from Marezig in Slovenian Istria, from which top organic wines come. Despite all of the above, their main goal remains to enrich the offer of our capital and create a comfortable and friendly corner where guests will experience "Mexico in miniature" in the middle of Ljubljana and, along with the food, also get to know some other aspects of (modern) Mexican culture and urban life, which in many ways transcends established stereotypes about Mexico.
