Arabic Fatayer Pie

Ingredients

    For the dough:

  • 450 ml of lukewarm water
  • 720 g of flour
  • 1 bag of dry yeast
  • 1 tablespoon of salt
  • 2 tablespoons of sugar
  • 100 ml of olive oil
  • For the cheese filling:
  • 300 g of young cheese
  • 60 g of cream cheese
  • 1 large egg
  • 1 tablespoon of oregano
  • 1 tablespoon of dry mint
  • For the meat filling:
  • 70 g of onion
  • 3 cloves of garlic
  • a handful of parsley
  • 170 g of tomatoes
  • 450 g of ground beef
  • 2 teaspoons of dry spices
  • 1 teaspoon ground paprika
  • 1 teaspoon allspice
  • 1/2 teaspoon of salt
  • 1/4 teaspoon pepper
  • 1 teaspoon pomegranate molasses (optional)
  • Other: • 1 egg • 1 tablespoon of water

Directions

    For the dough:
  1. Pour dry yeast into a little lukewarm water, add salt, sugar and a little flour, mix well and leave for 10 minutes.
  2. Add olive oil, the rest of the flour and water and knead until you get a smooth and slightly sticky dough. Add more flour if necessary.
  3. Divide the dough into 24 parts, form balls, spread them on the baking sheet, cover with foil and leave to rise for about 60 minutes.
  4. For the cheese filling:
  5. Mix all the ingredients, then mix well and place in the refrigerator.
  6. For the meat filling:
  7. Add finely chopped onion, crushed garlic, tomato and chopped parsley to the blender to combine, then pour in the resulting liquid.
  8. Mix the chopped vegetables with the other ingredients for the meat filling, then mix. Cover and refrigerate.
  9. To make the pie:
  10. Heat the oven to 180 degrees.
  11. On a floured surface, roll out one ball of dough (the diameter should be about 10-13 centimeters).
  12. Spread the filling in the center of the dough, then pull the edges of the dough up around the filling and bring them together to form a boat shape.
  13. Bake until golden, about 15-20 minutes.
  14. Serve warm.
