Hummus is a vegetarian spread loved by even the biggest meat lovers.
A word hummus otherwise it means chickpea in Arabic. In the Middle East, this dish has a rich tradition.
It is made from chickpeas, which must be cooked in such a way that it maintains the right structure and the skins do not deviate. When it is cooked, it is mashed to obtain a smooth mass, preferably with a puree tool. Real masters swear by manual preparation, i.e. without electric mixers.
Then add the tahini sesame paste to the chickpeas and mix to get just the right smooth texture. At the end, we add spices - usually salt, cumin and garlic.
Traditionally, hummus is only prepared for one day and is not stored in the refrigerator, but the preparation can be made easier by freezing cooked chickpeas in portions.

Homemade hummus
Ingredients
- 2 cloves of garlic
- 1 can of chickpeas, do not discard the water
- 4 tablespoons of lemon juice
- 2 tablespoons of tahini
- 1 teaspoon of salt
- 2 tablespoons of olive oil
- cumin to taste
Directions
- Chop the garlic in a blender, then toss in the chickpeas and leave one tablespoon for garnish.
- Add the liquid from the can to the blender, then the lemon juice, tahini and salt.
- Stir until the mixture becomes creamy and compact.
- Put the mixture in a bowl, put a little olive oil and cumin on top and garnish with chickpeas.
