A recipe for pampering: a divine tiramisu cheesecake that does not need to be baked

Ingridients

For the foundation

  • 170 g tiramisu cookies (savoiardi)
  • 75 g of melted butter
  • 1 teaspoon of cocoa
  • 1/2 teaspoon of coffee (powder)

For the cream

  • 500 g of mascarpone cheese
  • 150 g of powdered sugar
  • 1 teaspoon of vanilla extract
  • 180 ml of cream
  • 360 ml of brewed coffee
  • 8 g gelatin powder + 40 ml water
  • tiramisu cookies (savoiardi)
  • cocoa for dusting

Preparation

In a food processor (or in an airtight bag), crush the cookies for the tiramisu with coffee and cocoa. Add the melted butter and stir until the ingredients are well mixed. Spread the base on a 20 cm baking dish. Place in the refrigerator.

Mix gelatin powder and water in a small bowl. Allow to swell for 10 minutes.

Pour the hot coffee into a large shallow bowl and set aside to cool.

In a large bowl, mix the mascarpone, vanilla extract and powdered sugar until smooth and soft. Whip the cream in a separate bowl. Gradually add it to the mascarpone mixture.

Place the gelatin in the microwave for 15 minutes. When you take it out, add a few teaspoons of the marscarpone mixture to it and mix until it forms a uniform mass. Now mix it all back into the cream and mix until everything is well combined.

Apply half of the cream to the foundation. On top of that, add one layer of tiramisu cookies dipped in cold coffee for 1 to 2 seconds. Add another layer of cream on top of that and spread evenly. Refrigerate overnight or for at least 6 hours.

Just before serving, sprinkle with cocoa. So sweet good run!
