Ingredients

  • 1 cup pomegranate juice (freshly squeezed or store-bought)
  • 1 bottle of chilled champagne or sparkling wine
  • 1/4 cup fruit syrup (adjust to taste)
  • fresh pomegranate for garnish
  • mint leaves for garnish
  • ice cubes

Directions

  1. If using fresh pomegranates, cut them in half and squeeze out the juice using a citrus juicer or blender. Strain the juice to remove any pulp or seeds. Alternatively, you can use 100% store-bought pomegranate juice.
  2. Mix equal parts water and sugar in a small saucepan. Heat the mixture over medium heat and stir until the sugar is completely dissolved. Allow the simple syrup to cool before using.
  3. In a pitcher, mix fresh pomegranate juice with desired amount of simple syrup. Adjust the sweetness to your liking.
  4. Fill each glass with ice cubes to keep the syringe chilled.
  5. Pour the pomegranate juice mixture into each glass and fill it about one-third full.
  6. Gently pour chilled champagne or sparkling wine over the pomegranate mixture.
  7. Add a few fresh pomegranates to each glass for a burst of flavor and visual appeal. Garnish with mint leaves to add a touch of freshness.
  8. Using a long spoon, gently mix the ingredients and make sure the flavors combine well.
