Swedish Cinnamon Rolls

Ingredients for pastries

  • 340 g of milk
  • 640 g of flour
  • 34 g of sugar
  • 14 g of yeast
  • ½ spoon of salt
  • ½ tablespoon of cinnamon
  • ½ tablespoon cardamom

Filling ingredients

  • 128 g of butter
  • 106 g of brown sugar
  • 1 tablespoon of cinnamon
  • ½ tablespoon cardamom
  • 1 egg, sugar as needed

Preparation

Heat the milk in a small pot (35 degrees Celsius). Combine the flour, sugar, yeast, salt, cinnamon and cardamom in the bowl of a stand mixer. Mix the ingredients for 15 seconds, then add the milk. Mix the ingredients for 3 minutes. Transfer the pastry to a greased bowl, cover it and let it rest for an hour.

During this time, you can make the filling - mix the butter, brown sugar, cinnamon and cardamom in a large bowl. Flour a work surface and roll out the dough to form a 9 x 15 cm rectangle. Spread the filling evenly over the pastry (to the edges).

Fold the dough as if you were folding a letter to be scanned into a standard envelope. Cut the dough into 15 strips (cut along the short side of the dough). Roll each strip across the surface to form a spiral. Wrap the dough in a circle to form a circle. Repeat the process.

Cover the rolls and wait 30 minutes before baking. After the dough has risen, transfer it to an oven heated to 200 degrees Celsius.
