Recipe: crispy grissini

Grissini are crispy and thin sticks of yeast dough that are traditionally served as a snack in Italian cuisine. They are often served with sauces, cheese or prosciutto.

Breadsticks they are a great snack or used as an addition to salads, soups or other dishes. They are also quite easy to prepare at home, which increases their popularity among kitchen enthusiasts.

The grissini sticks must be thin enough to bake well. If you follow the recipe, you can make excellent grisini.

Ingredients

  • 150 g of white wheat flour
  • 50 g of wholemeal flour
  • 50 g of wheat semolina
  • 20 g of sunflower seeds
  • 20 g of ground flaxseed
  • 15 g of sesame seeds
  • 1 tablespoon of pumpkin seeds
  • 5 g dry yeast
  • 3/4 teaspoon salt
  • 1 teaspoon of sugar
  • 50 ml of olive oil
  • about 100 ml of warm water
  • oil and water, for coating
  • a little sea or Himalayan salt for sprinkling

Directions

  1. Fry the sesame seeds in a dry pan, then the sunflower and pumpkin seeds. You grind them.
  2. Sift wholemeal and white flour. Add semolina, roasted seeds, flax seeds and salt and mix.
  3. Mix in sugar and yeast, then 100 ml of water and oil, start mixing with a spoon, and then knead the dough with your hands. If necessary, add a little more water or flour.
  4. Cover the dough with a cloth and leave it in a warm place for about half an hour.
  5. Divide it into 20 balls of equal weight. Form each into a stick about 20 cm long, i.e. as much as the wide tray in which you will bake them.
  6. Place the baking paper on the baking sheet and spread the prepared grisini on it. Coat them with a mixture of water and oil, add a little salt and place in an oven heated to 160 °C. Bake for 20-25 minutes or until golden brown and crispy.
  7. They are usually slightly darker at the ends. Store them in a container with a lid.
