Recipe: meatless chickpea balls

Broccoli and chickpeas provide a daily intake of vitamins, minerals, fiber and protein. Prepare healthy, simple and delicious meatballs that will delight the whole family.

Ingredients

  • 400 g of cooked chickpeas from a can
  • 1 head of broccoli
  • 1 egg
  • 30 g of flour
  • 30 g of grated cheese
  • 3 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of dry parsley
  • salt and pepper to taste

Directions

  1. Wash and roughly chop the broccoli. Drain the chickpeas and rinse them under running water. Cook them together in boiling water for 2 minutes, then drain well.
  2. Toss a good half of the broccoli and chickpeas into a bowl. Mash the ingredients roughly with a fork, then add the flour, beaten egg, cheese, garlic, parsley, salt and pepper and the rest of the mixture.
  3. Mix everything well to combine well.
  4. Form balls from the mixture with wet hands and fry them for 3-5 minutes on each side.
  5. When the meatballs are golden brown, serve them with your favorite side dish.
