Pumpkins are versatile. You can make excellent soups, purees, gnocchi or wraps from them. But if you are short on time, we have prepared an easy recipe for pumpkin pasta.
Ingredients
- 200 g of pasta
- 1 tablespoon of hazelnuts
- 40 g of butter
- 2 tablespoons of vegetable stock
- 1/2 pumpkin
- 1 clove of garlic
- 4 sage leaves
- parmesan
Directions
- Peel the pumpkin and cut it into cubes. Place them on a baking tray, sprinkle with salt and drizzle with olive oil and bake for 30 minutes at 180°.
- Add the hazelnuts to the pan and roast them for 10 minutes.
- Cook the pasta.
- Add the butter and sage to the pan and let sit for 2 minutes.
- Add pasta, roasted pumpkin and a little soup base. Cook for 1 min and mix well.
- Serve with parmesan cheese.
