The season of pumpkins has begun, and you can use them to make various delicious sweets, including cookies.
They go great with a cup of coffee and are so good you won't be able to stop eating them. If you keep them in a box with a lid, they will stay fresh for up to a week.
Pumpkin cookies
Ingredients
- 400 g pumpkin
- 1 tablespoon of sugar
- 2 eggs
- 8 g of vanilla sugar
- 100 ml of oil
- 100 g of powdered sugar
- 280 g of flour
- 12 g of baking powder
Directions
- Clean the pumpkin, cut it into cubes, put it in a pan and sprinkle with a spoonful of sugar. Cover with a glass of water, then cook on moderate heat for about 15 minutes.
- When the pumpkin cubes are soft, mash them with a fork, add vanilla sugar, eggs, oil and powdered sugar and mix everything well.
- Add flour and baking powder to the mixture, then mix everything well again.
- Knead to get a smooth dough. Divide the dough into 4 equal parts, then form sticks from each.
- Cut them into pieces about 3 cm long and arrange them on a baking sheet lined with baking paper.
- Bake in an oven heated to 200 degrees for about 20 minutes.
- If desired, sprinkle them with powdered sugar before serving.
