Recipe: pumpkin cookies

The season of pumpkins has begun, and you can use them to make various delicious sweets, including cookies.

They go great with a cup of coffee and are so good you won't be able to stop eating them. If you keep them in a box with a lid, they will stay fresh for up to a week.

Pumpkin cookies

Ingredients

  • 400 g pumpkin
  • 1 tablespoon of sugar
  • 2 eggs
  • 8 g of vanilla sugar
  • 100 ml of oil
  • 100 g of powdered sugar
  • 280 g of flour
  • 12 g of baking powder

Directions

  1. Clean the pumpkin, cut it into cubes, put it in a pan and sprinkle with a spoonful of sugar. Cover with a glass of water, then cook on moderate heat for about 15 minutes.
  2. When the pumpkin cubes are soft, mash them with a fork, add vanilla sugar, eggs, oil and powdered sugar and mix everything well.
  3. Add flour and baking powder to the mixture, then mix everything well again.
  4. Knead to get a smooth dough. Divide the dough into 4 equal parts, then form sticks from each.
  5. Cut them into pieces about 3 cm long and arrange them on a baking sheet lined with baking paper.
  6. Bake in an oven heated to 200 degrees for about 20 minutes.
  7. If desired, sprinkle them with powdered sugar before serving.
