Pumpkin muffins are ideal for this time of year, when everything turns into autumn colors, and these muffins brighten up the experience with the smell of autumn.
Pumpkin muffins
Ingredients
- 260 g plain flour
- 1 baking powder --pinch of salt
- 1 tablespoon gingerbread spice and cinnamon
- 425 g of pumpkin puree (prepare in advance, bake the pumpkin for 1 hour at 180 degrees)
- 200 g of sugar
- 125 g of Greek yogurt
- 80 ml of oil
- 2 eggs
- 2 teaspoons of vanilla extract
- 200 g of chocolate
Directions
- Mix the flour, baking powder, salt and spices in a bowl.
- In another bowl, mix all the wet ingredients.
- Add the dry ingredients to the wet ingredients, mix the mixture and add 150 g of chopped chocolate.
- Heat the oven to 175 degrees. Line the muffin tin with paper baskets.
- Fill each basket 2/3 full.
- Sprinkle with the rest of the chocolate and bake for about 25 minutes.
- Cool well before serving.
