Salmon, a treasure trove of healthy fats, is an ideal choice for a light summer dinner. Delicious asparagus and new baked potatoes will make the meal even sweeter.
Ingredients for 4 people:
- 1 kg of new potatoes
- 5 tablespoons of olive oil
- 15 fresh asparagus
- 4 salmon fillets
- 1 teaspoon of salt
- ½ tsp freshly ground pepper
- 3 tablespoons of lemon juice
Process
Wash the new potatoes carefully under running water and cut them into thicker rings. Put it in a baking dish, season with salt and cover with two tablespoons of olive oil. Mix well and bake in a heated oven for 20 minutes.

While the potatoes are baking, prepare the asparagus and salmon fillets. Cut off the woody parts of the asparagus, wash the fish fillets and dry them thoroughly with paper towels. After 20 minutes of baking, remove the pan with the potatoes from the oven and add the asparagus. Push the baking sheet into the heated oven for another 15 minutes.
Season the salmon fillets with pepper and salt. Remove the pan from the oven again and gently mix the vegetables with a spatula. Place the salmon fillets in the baking dish, then season them with a little lemon juice. Pour the remaining olive oil over the ingredients in the baking pan. Push the baking sheet into the heated oven for another 10 minutes so that the salmon fillets are nicely baked.
