Vegetable moussaka is full of vitamins due to the variety of vegetables used, as well as beautiful colors that lift the mood even before you bite into it.
Vegetable moussaka
Ingredients
- 4 small zucchini
- 4 small peppers
- 1 cauliflower
- 1 broccoli
- 180 g of cream cheese
- 80 g of mozzarella or hard cheese as desired
- 2 cloves of garlic
- 3 tomatoes
Directions
- Cut the courgettes, peppers, cauliflower and broccoli and put them in the pan. Add salt and olive oil and bake at 200°C for about 20 minutes.
- Cream cheese is mixed with grated mozzarella, chopped garlic and mixed tomatoes.
- Pour over the vegetables, then sprinkle with grated cheese. And bake for another 20 minutes.
