The demand for organic food is increasing day by day, and it is no different for wine. Organic viticulture and winemaking is on the rise in our country and is part of green tourism. Wine produced in this way has more intense color and rich taste, and the production is also much more environmentally friendly. Since 2012, wines produced in this way can also carry the logo EU Organic, but not everyone has it yet.

Despite the much better quality of organic wine, the costs for its production are much higher compared to conventional production, and the yield is smaller, so not many winemakers choose this method. In our country, however, there are quite a few who have decided to produce this type of wine, which also impresses foreigners.

Come on, Urbajs is the first Slovenian winemaker with Demeter certificate, where the grower must respect biodynamic principles. Is also one of the most renowned Slovenian natural winemakers, he does not interfere with the wine, but leaves it to nature to make it. When you open the bottle, you never really know what awaits you.

To your wine it adds nothing and takes nothing away. In a traditional way, he squeezes the grapes, pours them into barrels, and waits to see what happens, with the help of the "pedigree fairies", as he says. These are yeasts, enzymes and fungi, which went from the soil to the cluster. Therefore, there is certainly no other winemaker who can put more different wines on the table. Rodica is one of the largest organic wine farms with a certificate of organic production in Slovenia. The farm is located in the heart of Slovenian Istria, in the village of Truške nad Marezigami near Koper. Beginner Marinko Rodica has been involved in viticulture since 1998, when his late father left him a thousand vines. Together with his family, his wife Suzana and sons Matic, Aleš and Roko, he has several red varieties in his vineyards today, but the most popular are indigenous varieties - refošk, malvasia and yellow muscat.

When growing grapes they do not use mineral fertilizers and no synthetic preservatives they produce healthy grapes. As part of the organic certification, they try to find coexistence with nature, using old knowledge. They also try to use as few ecological resources as possible, wines are also not sulphurized additionally. The popularity of their wines is increasing due to their high quality, and they are also exported to USA and other European countries.

The organic farm Šošter has been dormant for 25 years in the heart of the Jezuralemsko-Ormoške gorice. They are trying interfere as little as possible with the natural development of the wine, that's why, as they say, wines are different from year to year, just like our lives, a little different every year. So in their vineyards they do not use herbicides and artificial mineral fertilizers, but they only include nature-friendly means in the eco-friendly cycle of farming.

Grapes are grown in the best locations of the Jerusalem Landscape Park, and it is their guide preserve the authentic richness of the wine with minimal interventions in natural processes, provided by nature. They are divided into fresh, ripe and natural, and their collection currently includes species sauvignon and chardonnay of different ages, and a mixture of the two.

Matjaž Babič is the founder of this young winegrowing family, which since 2007 wants to preserve the tradition. The name MonteMoro comes from their original vineyard, which is located on Šalarské hrib near Koper, called Morova cortina. The Moro family and their vineyards, which they have now restored, originate from there. They devote themselves specially refošku, because of its strong dark color, since "moro" for the inhabitants of Istria means dark or black.

They pay a lot of attention to the vineyards, because they want to grow them in an environmentally friendly atmosphere, located on the sunny side. Little vine strain it allows the clusters to ripen healthily and can therefore be made from them wines of the highest quality. They use in their basement the old techniques of their grandfathers, combined with modern knowledge, so that the wine can mature as naturally as possible. Only in this way can their wines have such a rich taste.

In the heart of Goriške Brd, in the village of Snežatno, Štekar family creates a centuries-old tradition of winemaking. Earth full of minerals and seaside sun they represent ideal conditions for their vines. They believe that nature offers them as much as they offer it, so they want to offer it to their vines natural conditions, with minimal intervention in their growth process. They have ecological certificate, which is why their wine is also certified as such a product.

They say that grapes are alive, which is why they treat and care for them in this way. That's it the wine is alive, therefore, due to the minimal interventions, each bottle is something different and special. Guerilla from Ajdovščina is the fruit of ideas, dreams, desires and stubbornness Zmagoslav Petrič. In its modern wine cellar and vineyard follows biodynamic principles, because he believes that the key to life is in harmony and balance. He says that in his idea of viticulture, he believes in complete respect for nature and that authentic wine is born in the vineyard and only matures in its perfection in the cellar.

The vineyards are located on the southern slopes of the Vipava hills, which allows for good ventilation, optimal sunlight and high temperature fluctuations between day and night. By using biodynamic preparations, they spread the microflora and they connect plants with cosmic forces and promote the organisms' own resistance, through use compost and green manure however, they take care of revitalizing the soil and biological diversity, which, as they say, is a condition for the health and harmony of the vineyard.

On an organic estate Montis & Eko Laura wines produce the natural treasures of Slovenian Istria: wines, olive oil, homemade liqueurs and brandy. Their range of wines includes two indigenous varieties: Refošk and Malvasia, and so on Muscat. In the small Istrian village of Montinjan in Mareziga nad Koper, at an altitude of 150 meters above sea level, the conditions for the growth of vines and olives are very favorable. The vineyards occupy sunny positions overlooking the sea, so it is said that this is why he designs them the smell of the Mediterranean and the rich taste.

What exactly is organic viticulture and winemaking?

Grapes intended for organic wines must be produced organically. So when growing vines, may not be used mineral fertilizers and phytopharmaceuticals, but only organic fertilizers. This can be manure or, for example, compost. However, since the vine is a very sensitive plant that is often attacked by pests, it needs to be protected. Winemakers therefore try to be selective when choosing varieties as resistant varieties as possible, but they only use it for protection natural mixtures.

But when it's time to make wine from organic grapes, you have to be aware that they are also allowed only natural preparations, therefore grapes own fungus, without additives as with conventional wine. It's wine on dregs for a long time, so it is necessary less sulphurisation, and in the end it also has more antioxidants.
