This type of pizza has a Protected Geographical Indication (PGI), which means that it must be made according to a specific recipe and with ingredients typical of the Naples region. It is traditionally made with a thin and soft crust coated with tomato sauce, mozzarella, basil and olive oil.

The main reason for its popularity is its simple yet delicious combination of ingredients that together form a complete meal. It is baked on high for just a few minutes so that the crust is slightly charred and the cheese is melted and creamy.

Ingredients

  • 500 g flour type 00
  • 350 ml of warm water
  • 1 tablespoon of salt
  • 1 teaspoon dry yeast
  • 1 teaspoon of sugar
  • 400 g of pellets
  • 200 g of mozzarella cheese
  • basil
  • salt
  • olive oil

Directions

  1. Sift the flour and salt into a bowl. In a separate bowl, mix the yeast and sugar in the lukewarm water, then let it sit for 5 minutes to start foaming.
  2. Pour the yeast mixture into the center of the flour and gradually mix the ingredients until you get a smooth dough. Cover the dough with a napkin and let it rise for 1-2 hours until it doubles in size.
  3. While the dough is rising, make the tomato sauce. In a blender, combine the pelate, salt and a few leaves of fresh basil. Set the sauce aside.
  4. Heat the oven to 250 degrees Celsius. Cover the baking tray with paper and dust it with a little flour.
  5. Quickly knead the dough and divide it into 4 equal parts. Roll out each part. About 1 cm thick. Place on prepared baking sheet.
  6. Spread tomato sauce on each pizza, sprinkle with grated mozzarella and add a few basil leaves. Drizzle with a little olive oil.
  7. Bake in the preheated oven for about 10 minutes until the crust is golden brown.
