Recipe: gluten-free breakfast with forest fruits and quinoa

This breakfast is not only delicious, but it's also gluten-free and a great source of protein, provided by yogurt, quinoa, and nuts. Forest fruits will provide an additional dose of vitamin C.

Ingredients

    Ingredients for preparing a perfect breakfast
  • a cup of Greek yogurt
  • 2 spoons of honey
  • forest fruits to taste (strawberries, blueberries, raspberries, blackberries)
  • 1/4 cup cooked quinoa
  • 1-2 tablespoons of coarsely chopped almonds (pound them over a cloth or in a bag with a meat mallet)
  • fresh mint leaves

Directions

  1. Mix Greek yogurt and honey in a bowl.
  2. Spread a third of the yogurt mixture, a third of the chopped berries and a third of the cooked quinoa in a glass.
  3. Sprinkle with some almonds and repeat the order, at the end pour honey over everything and decorate with fresh mint leaves.
Warning: You should always rinse quinoa well under running hot water before cooking, as this removes the natural protection against pests that quinoa has. If you don't, it can taste bitter.
