Recipe: Italian summer pie with zucchini and Parmesan cheese

An extremely tasty Italian summer pie is the ideal choice for anyone who does not like to complicate things in the kitchen. A simple recipe for a divine treat.

 

 

Ingredients for 4 people:

  • 400 g of young zucchini
  • 1 white onion
  • 1 clove of garlic
  • 2 eggs
  • 5 tablespoons of flour
  • 100 ml of milk
  • 4 tablespoons of grated parmesan cheese
  • salt
  • pepper
  • 2 tablespoons of olive oil

Process:

Clean, wash and cut the zucchini into rings. Put the rings in a colander, add salt and let them stand for 20 minutes to release the water.

Peel and finely chop the garlic. Peel, rinse and cut the onion into rings. Heat the oven and coat any baking pan well with oil. Mix the eggs, flour and milk in a bowl with a whisk. If desired, add some more water. Mix zucchini, parmesan, garlic and onion into the dough. Season to taste with pepper and salt.

Pour the mixture into a greased pan and spread it evenly over the surface. Place the pan in the oven and bake for about 20 minutes, or until the pie is golden-yellow.
