The April academy will be playfully spring colored. We will include the first spring crops in the dish and season them as in the old days. We will prepare asparagus with thorn and other delicacies.
April is the time asparagus, so the emphasis will be on their preparation. This time we will add to them thorn, very special velikoninina hard cheese made from cottage cheese, which shepherds once made in pairs, as it symbolizes women's breasts, and then gave one as a sign of love to their chosen ones. We will also prepare octopus in a salad with dandelions and strawberries, asparagus cream soup, risotto with asparagus, shrimps and horseradish, and asparagus bundles in crispy pancetta with young goat cheese, pine nuts and pumpkin oil. The main dishes will be prepared by the head chef Kaval inns and pizzerias, Dragan, and desserts will be provided by a confectioner from Lolita, Greg. The official water of the academy is Pit.
