Recipe: light cake with Greek yogurt and fruit

Cake with Greek yogurt and various types of fruit is a very light, fluffy and refreshing dessert. If you have Greek yogurt in the fridge for a few days and don't plan to eat it, you can use it in the cake preparation. While we love the versions with cottage cheese, mascarpone, or cream cheese, we also love this option that features the popular Greek yogurt.

The ingredients for preparation are few, so the preparation process is also quick and simple. There are many serving options, as you can decorate the cake with various fruits, such as blueberries, raspberries, strawberries and various toppings.

Ingredients

500 ml of Greek yogurt
100 g of sugar
Pinch of salt
2 eggs
2 teaspoons of vanilla extract
1 tablespoon cornstarch
Graham crackers (10 pieces)
3 tablespoons of almond milk

Directions

1. Heat the oven to 180 degrees.
2. Line a baking pan (diameter 18 or 20 cm) with baking paper or grease it well. 3. Coarsely grind graham crackers and mix them with almond milk. Spread the mixture evenly over the bottom of the pan.
3. Mix eggs with sugar and add Greek yogurt and vanilla. Finally, add a pinch of salt and cornstarch to the smooth, fluffy mixture. Pour it on the prepared base and smooth it.
4. Bake for 30 to 40 minutes, until the cake turns golden yellow and the edges begin to separate from the mold. Let it stand in the refrigerator for at least two hours before cutting. At the end, decorate it with any fruit and toppings.
