Ingredients for Brittle Flanks:

  • 500 g of white flour
  • 100g of softened butter
  • 4 eggs
  • salt
  • 4 tablespoons of rum
  • 6 spoons of sugar
  • 1 bag of vanilla sugar
  • 1 pot of sour cream
  • 2 tablespoons of lemon juice
  • lemon peel
  • oil for frying

Procedure for brittle flanges:

Sift the flour into a large bowl and make a well in the middle of the pile. Add half of the softened butter, sour cream, eggs, a pinch of salt, vanilla sugar and sugar. Mix everything well and add rum and grated lemon peel to the mixture. It is best to choose an organic lemon. Knead the dough from all the ingredients, then cover it and let it rest for at least half an hour. Roll out the rested dough on a floured surface to a thickness of at least 4 millimeters and cut it into rhombuses or rectangles with a rolling pin or a knife. Cut a few more lines along the middle of each rectangle. Fry the flanks in hot oil. Drain the baked flancakes on paper towels and sprinkle with powdered sugar, but you can also cover them with sweet real chocolate melted over steam, into which 50g of the remaining softened butter is mixed into a foam.
