Ingredients

    Dough ingredients
  • 250 g of flour
  • 125 g cold butter
  • 5 tablespoons of cold water
  • 1 teaspoon of salt
  • 1 teaspoon of sugar
  • Ingredients for the filling:
  • 6 medium-sized apples, thinly sliced
  • 50 g of butter
  • 100 g of sugar
  • 2 teaspoons of cinnamon
  • 1 teaspoon of vanilla extract
  • Ingredients for vanilla cream:
  • 500 ml of milk
  • 6 egg yolks
  • 120 g of sugar
  • 2 teaspoons of vanilla extract
  • 3 tablespoons of cornstarch

Directions

  1. For the dough, first sift the flour and salt into a bowl. Add cold butter and crumble with your hands until you get a crumbly texture. Add cold water and knead the dough. Shape into a loaf and wrap in transparent foil. Leave to rest in the refrigerator for at least 30 minutes.
  2. For the filling, melt butter in a pan, add sugar, cinnamon and vanilla extract. Add the grated apples and stir until the apples are soft. Let the filling cool.
  3. For the vanilla cream, mix the egg yolks and sugar in a bowl. Add cornstarch and vanilla extract and mix until a smooth mass is obtained.
  4. Heat the milk in a saucepan until it boils. While stirring constantly, add the yolk mixture and cook until the cream thickens. Remove from heat and let cool.
  5. Roll out the dough on a floured surface to the size of a baking sheet. Place it in a baking dish and spread the cooled filling in the middle. Wrap and carefully place in the baking tray.
  6. Bake in an oven heated to 180°C for about 45 minutes, until the roll is golden brown. Place the baked roll on a wire rack and let it cool.
  7. Cut the cooled roll and serve with cold vanilla cream. Bon Appetit!
