Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon of salt
  • 1 teaspoon of sugar
  • 1 cup unsalted butter, cold and diced
  • 1/4 to 1/2 cup ice water
  • 8 cups thinly sliced apples (about 8 medium apples)
  • 3/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon of ground ginger
  • 1/8 teaspoon ground cloves
  • 1 egg, beaten
  • 1 tablespoon of milk
  • Demerara sugar, for sprinkling (optional)

Directions

  1. In a large mixing bowl, combine the flour, salt and sugar.
  2. Using a pastry cutter or your fingertips, cut the butter into the flour mixture until the mixture resembles coarse sand.
  3. Gradually add the ice water, one tablespoon at a time, until the dough comes together. Be careful not to over mix.
  4. Divide the dough in half, wrap each half in plastic wrap and refrigerate for at least 30 minutes.
  5. Preheat oven to 425°F (220°C).
  6. In a separate mixing bowl, combine the sliced apples, granulated sugar, flour, cinnamon, nutmeg, ginger and cloves.
  7. On a lightly floured surface, roll out half of the pie dough into a 12-inch circle. Transfer it to a 9-inch pie pan.
  8. Fill the pie crust with the apple mixture by poking the apples in the center.
  9. Roll the other half of the pie dough into a 12-inch circle. Cut it into strips or use a cookie cutter to create a decorative top.
  10. Place the strips or cutouts on top of the pie, interlacing them or arranging them in a decorative pattern.
  11. Mix the egg and milk in a small bowl. Brush the top of the pie with egg wash and sprinkle with Demerara sugar, if using.
  12. Place the pie on a baking sheet and bake for 15 minutes. Reduce the heat to 375°F (190°C) and continue baking for an additional 35-45 minutes, until the crust is golden brown and the filling is bubbling.
  13. Allow the pie to cool before serving. Serve warm or at room temperature, with a scoop of vanilla ice cream or a scoop of whipped cream, if desired.
