Ingredients

  • 2 cups of sushi rice
  • 2 1/2 cups of water
  • 1/4 cup rice vinegar
  • 2 tablespoons of sugar
  • 1 teaspoon of salt
  • crazy leaves
  • filling of your choice (e.g. raw fish, boiled crab, boiled shrimp, avocado, cucumber, carrot, etc.)
  • wasabi, ginger and soy sauce for serving

Directions

  1. Rinse the rice in cold water until clean. Cover and cook on medium until the water boils. Then reduce the temperature and let it cook for 10-15 minutes until the rice has absorbed all the water.
  2. Heat the rice vinegar, sugar and salt in a small saucepan until the sugar and salt dissolve.
  3. Once the rice is cooked, remove from heat and let stand for 10 minutes, then transfer to a large bowl. Gently add the vinegar mixture and toss to coat the rice evenly.
  4. Place the nori kelp leaves on the sushi rolling mat and place a small amount of rice on top. Place the filling of your choice on top of the rice. Roll and cut into small pieces.
  5. Serve with wasabi, ginger and soy sauce to taste.
