Warmer days are coming, when we will be able to serve lunch on the balcony or in the garden. Spice up your meal with healthy and delicious vegetable enchiladas.
Ingredients (for 10 enchiladas)
Tortillas:
• 100 g of flour
• 100 g of polenta
• 1/2 teaspoon of salt
• 1 egg
• 450 ml of water
• 1 pinch of ground cumin
• 1 teaspoon of oil
Filling:
• 1 onion
• 2 cloves of garlic
• 1 red and 1 green pepper
• 2 dessert spoons of oil
• 1 can of beans
• 1 can of sweet corn
• 2 tomatoes
• 2 dessert spoons of tomato puree
• 1 pinch of dried chili
• salt, pepper
• 1 pinch of cayenne pepper
• 1 teaspoon of oregano
• ½ teaspoon ground cumin
• 100 g of grated cheese
• 1 dessert spoon of oil for frying
Preparation
1. Mix flour, polenta and salt. Pour the mixture into a mixing bowl and beat in the egg with a whisk. Gradually add water. Mix in the oil and beat to get a pancake-like mass. Let stand for 30 minutes.
2. For the filling, cut the onion and pepper (into strips). Fry the onion and chopped garlic in oil. Add paprika.
3. Steam the tomatoes, peel them and cut them into small pieces. Add them to the pan along with the sweet corn and beans. Season and roast for an additional 5 minutes. Remove the pan from the hob, stir in the tomato puree and 40 g of cheese.
4. On medium-high heat and in a small amount of fat, make about 12 waffle-thick tortillas with a diameter of 20 centimeters. Add 2 dessert spoons of filling to the center of each tortilla and roll them up.
5. Line the baking tray with baking paper. Place the enchiladas side by side on the baking paper. Sprinkle with the remaining cheese and gratinate.
Advice
Tortillas should have small holes.
