Carrot soup with ginger
Ingredients
- Ingridients:
- 3 tablespoons of butter
- 2 tablespoons of olive oil
- 2 cups chopped onion
- 7 medium-sized carrots
- 2 cups chicken stock
- 2 cups of water
- 1 teaspoon of ground ginger
- 1 orange peel
- salt, as desired
- pepper, as desired
- chives, parsley, fennel... for decoration
Directions
- Melt the butter in a saucepan over moderate heat and add the onion and carrots, stirring occasionally. Cook until the onion softens (5-8 minutes), adding a pinch of salt while stirring.
- Add the soup stock, water and ginger. Bring the mixture to a boil, then cover the pan and cook until the carrots are tender (about 20 minutes).
- Puree the soup with a stick blender. If desired, add a pinch of salt and garnish with chives, parsley or fennel. Bon Appetit!

– For vegetarian version use instead of chicken vegetable soup base.
– You can further improve the taste of the soup by adding 2nd step add more 3 strips of orange peel, which are then removed from the soup after cooking.
