Ingredients

    Ingridients:
  • 3 tablespoons of butter
  • 2 tablespoons of olive oil
  • 2 cups chopped onion
  • 7 medium-sized carrots
  • 2 cups chicken stock
  • 2 cups of water
  • 1 teaspoon of ground ginger
  • 1 orange peel
  • salt, as desired
  • pepper, as desired
  • chives, parsley, fennel... for decoration

Directions

  1. Melt the butter in a saucepan over moderate heat and add the onion and carrots, stirring occasionally. Cook until the onion softens (5-8 minutes), adding a pinch of salt while stirring.
  2. Add the soup stock, water and ginger. Bring the mixture to a boil, then cover the pan and cook until the carrots are tender (about 20 minutes).
  3. Puree the soup with a stick blender. If desired, add a pinch of salt and garnish with chives, parsley or fennel. Bon Appetit!

Additional tips:

– For vegetarian version use instead of chicken vegetable soup base.
– You can further improve the taste of the soup by adding 2nd step add more 3 strips of orange peel, which are then removed from the soup after cooking.
