  • 1.5 tablespoons of olive oil
  • 2 stalks of celery, finely chopped
  • 1 carrot, finely chopped
  • 1 onion, finely chopped
  • 3 cloves of garlic, finely chopped
  • 2 teaspoons of salt
  • 1 teaspoon of pepper
  • 1 tablespoon of butter
  • 0.5 kg mixed mushrooms, sliced
  • 4 cups mushroom or vegetable stock stock
  • half a cup of whipping cream
  • half a teaspoon of dried thyme
  • herbs for decoration

Directions

  1. Heat 1 tablespoon olive oil in a large pot over medium heat. Add the carrot, celery, onion and garlic and season with a pinch of salt. Cook for 8-10 minutes, stirring frequently, then set the mixture aside and transfer the vegetables to a plate.
  2. Add half a tablespoon of olive oil and butter to the mixture in the pot. When the butter is melted, add the mushrooms.
  3. Cook for 5 minutes without stirring. Then, stirring occasionally, cook for another 7-10 minutes, add a pinch of salt and pepper to the soup and transfer half a cup of cooked mushrooms to a small bowl.
  4. Add cooked vegetables, cream, a pinch of salt and pepper and thyme to the mixture. Allow to simmer gently for 8-10 minutes, then remove from heat.
  5. Blend with a stick blender until the mixture is smooth. Then mix the mushrooms from the bowl into the soup. Pour into plates and garnish with herbs if desired. Bon Appetit!
