Pasta with salmon and zucchini are tasty and nutritious lunch, especially if you avoid using cooking cream. We found a recipe that is just that. Not too greasy, but at the same time rich in good fats, vitamins and minerals.
Pasta with salmon and zucchini
Ingredients
- 150 g of pasta
- 100 g of fresh salmon cut into cubes
- pumpkin
- clove of garlic
- spoon of olive oil
- juice of half a lemon
- black pepper and salt
- 2 tablespoons of chopped fresh parsley
- 2 tablespoons Parmesan cheese
Directions
- Cook the pasta according to the instructions, drain and set aside.
- Fry the chopped garlic in heated olive oil, then add the courgettes and simmer them for a few minutes.
- Add the salmon cubes and simmer for about another five minutes.
- Once the zucchini and salmon are combined, add the pasta, pepper, salt and lemon juice. Mix well and simmer for another minute. Sprinkle with fresh parsley.
- Sprinkle with parmesan before serving.
