Italian specialties are known all over the world, and besides pizza, lasagna and macaroni, we all also love gnocchi. They are made from potato dough and can be served with sauces of your choice or as a side dish.

Gnocchi is a great substitute for potatoes or macaroni in a stew, but it's also great as a meal on its own.

Homemade gnocchi in tomato sauce

Ingredients

    Ingredients for gnocchi:
  • 1 kg of potatoes
  • 280 g of flour
  • 1 tablespoon of salt
  • a little nutmeg
  • 2 egg yolks
  • olive oil
  • Ingredients for the sauce:
  • 4 tablespoons of olive oil
  • 3-4 cloves of garlic
  • 570 ml of tomato sauce
  • 1 handful of basil
  • 200 g of mozzarella
  • 55 g Parmesan cheese

Directions

  1. Put the potatoes with their skins in a pan, cover with water and cook until soft. Then strain and let it cool for about 20 minutes. Remove the peel, then mash well.
  2. Add sifted flour, salt, nutmeg and beaten egg yolks. Combine the ingredients and knead a smooth dough.
  3. Roll out the dough on a floured surface, then cut it into 4-5 parts. Take one part of the dough, roll it thinly (like a thin snake), and then cut it into pieces. You can mash the gnocchi with a fork.
  4. Boil them in boiling water. When they float to the surface, leave them for another minute or two. Then we take them out, let them dry and sprinkle them with a few drops of oil.
  5. Pour olive oil and whole cloves of garlic into the pan, throw them away when they turn golden. Pour over tomato sauce, salt, pepper and sprinkle with chopped basil. When it starts to boil, reduce the heat and cook for another 10 minutes, stirring occasionally.
  6. Add the gnocchi to the pan with the tomato sauce and mix gently. Then pour the sauce and gnocchi (half the amount) into the baking dish, sprinkle with chopped mozzarella and sprinkle with Parmesan. Pour over the remaining gnocchi.
  7. Bake in a heated oven at 220°C for about 15 minutes. Remove from oven and let cool for 15 minutes.
