It is indispensable wherever dishes are prepared with wine, olive oil and garlic, a sprig of rosemary is a "must have" at all picnics, where it is used instead of a brush or as a skewer. If we stay with more traditional dishes, rosemary will enrich the taste of tomato sauces, bread, pizzas, various vegetable fillings and side dishes, potatoes... Fresh has the strongest aroma, dried leaves quickly lose their aroma, and it is necessary to crush them before use. Even otherwise, make sure that, if possible, rosemary is added to the dish in such a way that it can be easily removed later (either whole sprigs or tied in cheesecloth).

When tradition fails
Rosemary can be used to conjure real culinary masterpieces or to add a very special shade of flavor to seemingly ordinary food. Try adding crushed rosemary leaves to various apple desserts, jams and jellies. Sprinkle small rosemary flowers on salads, add them to fruit salads and sauces. Crushed rosemary leaves can also be added to fruit salads, which will brighten up various alcoholic cocktails to which citrus juices have been added, and you will experience divine flavors if you drizzle a scoop of good vanilla ice cream with a few drops of homemade pumpkin oil and sprinkle it with crushed rosemary leaves. Even otherwise, rosemary can be used almost everywhere where lemon is used, it can be added to various fillings for meat or poultry. If we like to use our imagination, we can prepare rosemary liqueur or sorbet, homemade rosemary-menthol ice cream or homemade raspberry with rosemary. Lovers of wild flavors will have an unforgettable experience with rosemary-orange mustard (if you don't make it yourself, add grated orange peel, orange juice and crushed rosemary to purchased mustard). With various foams and creamy desserts, we will not go wrong if we use rosemary for decoration - the sweet smell of pastries and rosemary essential oils are a perfect match. Rosemary can be used in combination with citrus fruits and honey to create an excellent coating for roasting poultry - this coating will create an excellent crust on the meat when it is baked in the oven. A sprig of rosemary goes perfectly with dried fruit (apricots, figs, plums, dates), and it can also be used to flavor homemade vinegar or olive oil. If none of the above tips will convince you, add fresh rosemary sprigs to your bathtub - aromatic relaxation guaranteed...

FRESH AND HOMEMADE

The Rožmarin restaurant opened its doors in Galerija Gosposka, a new shopping center in the center of Maribor. The modern building, which is actually a renovated and glass-clad former Kvik store, allows passers-by to look through the transparent walls at the modern restaurant, furnished in a minimalist style and consisting of four levels. We step off the sidewalk into a cafe, where the smell of coffee and chocolate cake tempts us. The real luxury for all the senses begins when we go down the wooden stairs to the almost ascetically decorated dining room, where we will not be disturbed by any unnecessary stimuli during an indulgently slow breakfast or lunch: there is no wild music, no loud guests or bad-tempered waiters. In Rožmarin, they cook thoughtfully, all ingredients are fresh, from the market, they listen to the seasons...

They will satisfy even the most demanding eater, first they "rock" you with a creamy zucchini soup with parmesan and toasted breadsticks, meat eaters will surely be convinced by the veal steak with Marsala and thyme sauce, and seafood lovers with sea bream in tomato fondue with saffron... Even at lunch , and especially in the wine cellar under the restaurant, they will spoil you with wines that they say have their first and last name, father and mother, birthplace and true mood.

You will certainly not miss the latter in Rožmarin.
